Lobster thermidor / Homar thermido

I find these crustaceans problematic. Not only it’s quite difficult to reach for their succulent meat but  their taxonomic names vary according to their size and kind of legs. It is quite confusing for me. 
You can buy them in Spain, under different names and prices. They are also available alive. It is important  to prepare them in a humanitarian way. The best way to do it is to put them into a freezer, apparently they fall asleep then.
I bought them already boiled, and cooked their meat in a sauce that I prepared beforehand.



For 3 small lobsters you will need:
2 tbs of butter
2 thinly chopped shallots
300ml fish stock
60 ml cognac or brandy
100ml heavy cream
15ml lemon juice
1 tsp of English mustard
2 tbs of grated Parmesan


Half the lobsters length-wise. Scoop out the meat from tails and put aside. Clean the shells. Divide the meat into a bite size portions and put it back into the tail shells. 
Sauce : Cook the shallots on a frying pan until translucent (2-3 minutes). Add the fish stock and cognac. Next add the cream, lemon juice and mustard. Reduce the sauce by half on a small heat. Add salt and pepper.
Arrange the lobsters on a baking tray. Pour the sauce over the meat. Top with Parmesan and bake in the hot oven for about 5-10 minutes, until the cheese gets golden brown. Serve sprinkled with dill and parsley.

Mam zawsze problem z tymi skorupiakami. Nie dość, że czasem trudno dobrać się do ich smakowitego mięsa to jeszcze w zależności od wielkości, obecności szczypiec i chyba także przynależności taksonomicznej (a może przede wszystkim dlatego) nie bardzo radzę sobie z ich nazewnictwem.
W Hiszpanii pod różnymi nazwami (i w różnych cenach) można kupić mniej więcej to samo zwierzątko. Nie jestem znawcą i pewno ci będą oburzeni takim stwierdzeniem.
Można kupić je żywe (trzeba je wówczas w humanitarny sposób uśmiercić) lub ugotowane. Sposób humanitarny polega na włożeniu stawonoga do zamrażarki, podobno tam zasypia.
Ja kupiłam homary już ugotowane. Zapiekłam ich mięso w sosie, który wcześniej przygotowałam.

Na trzy mniejsze homary potrzebujemy :
2 łyżki masła
2 drobno posiekane szalotki
300ml bulionu rybnego
60 ml koniaku lub brandy
100ml tłustej śmietany
15ml soku z cytryny
1 łyżeczkę musztardy angielskiej
2 łyżki startego sera typu parmezan



Homary należy podzielić na połówki, krojąc wzdłuż ostrym nożem (to wymaga trochę siły). Wyjąć z ogonów mięso i odłożyć. Z korpusu zwierząt usunąć wnętrzności. Mięso z ogonów podzielić na kęsy i włożyć do skorupy ogona każdego homara.
Sos : Zeszklić na maśle szalotki (2-3minuty). Wlać na patelnię z szalotkami bulion rybny i koniak, następnie śmietanę, sok z cytryny i musztardę. Zawartość patelni należy zredukować na niewielkim ogniu o połowę. Doprawić solą i pieprzem.
Homary należy ułożyć na blasze do pieczenia, a mięso wewnątrz ogonów zalać przygotowanym sosem, posypać parmezanem po wierzchu i wstawić do gorącego piekarnika na 5-10 minut, aż ser lekko się zrumieni. Podawać posypane koperkiem lub pietruszką.
Przepis na sos znalazłam w jednej z moich ulubionych książek (jest ich cała seria, niektóre ukazały się w języku polskim) "Seafood basics" Abi Fawcett, seria nazywa się "My cooking class".
